Going Gluten-Free?

I have a friend who discovered that she was gluten free at the age of 35. Her entire life before that was garlic bread, bagels, and any bread that she could put apple butter or honey butter on. One day, she just did not feel well. Then a second day, and a third day.... you get the picture.
So, she called her Doctor. This was not something she did often, but had been treated on the rare occasion by this same Doctor for 20 years. She knew what he looked like, and he knew that she did not have allergies... TO ANYTHING!
So, here Doctor did what every other Doctor would do... he ordered tests. Then another round of tests, and finally a "test that cannot be named", where a tube goes up.... I hope you don't get a mental picture.
After all the tests were run, she met with her Doctor. This is not a "sit on the exam table and wait"... this was a "sit in his 'office' in a leather chair and have a chat". He started by saying that they "found something pretty normal". She was thinking, "Do I have the Flu?"
Nope! She had Celiac Disease. Gluten Intolerance on steroids. "I can't eat bread... that won't be so hard.", she stated/asked her Doctor. He said that it was more complicated than that.
He explained about modified food starches, anti-caking agents, barley, wheat, bran, and by the time he got to thickeners in just about every sauce she eats, she was thinking that she would live a life of eating steak and salads.
"But I don't like eating steaks, and salad is a not a meal... it is 'part' of a meal.", she was trying to hold her mind back from exploding, as her stomach rumbled.

That is how it started for her. She did long for a life before she got "Glutarded", but found so many new ancient grains, flavorful rices, and even gluten-free baked goods. And, she discovered that honey, real butter, and a gluten-free slice of hand-made bread was very tasty.
She also found that cooking at home was easy, plus most Mexican foods were gluten free, except for flour tortillas.
